BAKED CARROTS AYURVEDA

This ayurvedic roasted carrot recipe, is extremely simple to prepare and suitable for vata and kapha in the winter autumn seasons. Vata may add a little ghee instead of olive oil. Pitta can have in moderation accompanied with green vegetables and using coconut oil or ghee instead of olive oil.

INGREDIENTS

  • Carrots
    Oil, salt, pepper, cumin seeds

 

RECIPE

  • Peel carrots and cut like frites
    Put in oven dish with olive oil, salt, pepper and sprinkle a few cumin seeds. Oven 160C for 15 minutes, then increase to 180C for another 10 mns
    Take out of the oven when they are « al dente”
