ayurveda vegan carrot, cucumber & avocado salad

A summer refreshing vegan carrot, cucumber & avocado salad to keep it light, moist and easy on our digestive system.

Ingredients for 1 person:

  • Carrots x 3
  • Cucumber x 1
  • Avocado x 1
  • Raisins x 10 (pre-soaked)
  • Fresh Lime Juice x 1
  • Olive oil
  • Salt
  • Pepper
  • Curry powder (optional)
  • Fresh mint – a handful


  • Grate the carrots and cucumber separtaely
  • In a bowl mix the remaining ingredients (except the raisins and avocado)
  • Pour over the raw vegetables – keep the carrots and cucumber separate
  • Leave to soak (and pre-cook) for 5-10min
  • In the mean time slice a organic ripe avocado
  • Mix the raisins into the carrot salad and your vegan carrot, cucumber & avocado salad is ready to serve !
